Mary "Ginger" Virginia Griffin

June 4, 1948 — February 9, 2026

Katy, Tx.

Mary "Ginger" Virginia Griffin, born on June 4, 1948, in Nuremberg, Germany, passed away in Katy, Texas, on February 9, 2026. She was a beacon of light and compassion throughout her life, having devoted herself to the teachings of love, kindness, and education.

In 1971, Mary graduated with a master’s degree in education from Stephen F. Austin State University, where she met her future husband, Scott Griffin. Their union on January 23, 1968, in Nacogdoches, Texas, heralded a partnership that would flourish alongside their shared commitment to nurturing the minds and spirits of young learners.

The journey of life led Mary and Scott to Katy, Texas, in 1971, where Mary became the first special education teacher at Katy Jr. High, eager to embrace a new challenge that would allow her to uplift children with diverse needs. She soon transitioned to elementary education, dedicating her expertise to the pupils at both Katy Elementary and Hutsell Elementary. Even after retirement, her passion for teaching remained unwavering as she took on the role of a long-term substitute, ensuring that her influence continued to touch the lives of countless students.

An avid participant in her community, Mary was instrumental in establishing the Children’s Liturgy at St. Bartholomew the Apostle Catholic Church, crafting a space where families could nurture their faith together. Her unfaltering generosity of spirit was reflected in a life spent assisting others; she was always ready with a helping hand for those in need.

Among her many joys, Mary particularly cherished the time spent with her grandchildren—Griffin Hurt, Karsynn Hurt, Summer Mitchell (Garrett), Macy Griffin, Tatum Griffin, and Dean Griffin. The love she had for her family was boundless, and her laughter and warmth created cherished memories that will forever be held dear by those who knew her.

Mary’s life was adorned with accomplishments that, while humble, revealed her vibrant spirit. One notable achievement was winning the Betty Crocker National contest, despite her own modesty in the kitchen. Her husband Scott often took up the cooking duties, yet Mary’s heart was filled with joy at this unexpected recognition.

Mary Griffin is survived by her beloved husband, Scott Griffin; her loving children, Melissa Hurt (Owen) and Jeff Griffin (Micah); her cherished grandchildren; her sister-in-law Ronda Hostetter; and her nieces and nephews, Kim Sylvan, Jennifer Smith, Kelsey Smith, and Wakefield Smith. She was preceded in death by her parents, Clara Schultz and James W. Smith, and her brother, James Smith.

The family extends their heartfelt gratitude to the staff at Autumn Grove Cottage, Carriage Inn, and Villas of Sycamore Creek for their compassionate care during Mary’s final journey. As we reflect on the life of Mary "Ginger" Virginia Griffin, let us honor her legacy of kindness, dedication, and love—qualities that have left an indelible mark on the hearts of all who were fortunate enough to know her.
